Ingredients
- 1 yellow onion, diced
- 1 tbsp minced ginger
- 4 cloves garlic, minced
- ⅔ cup sunflower seeds, toasted
- ½ cup slivered almonds, toasted
- ¼ cup sesame seeds, toasted
- 1 tbsp chili powder
- 2 tomatoes, chopped
- ½ cup tomato paste
- ½ cup chopped dark chocolate
- 1 can chilis in adobo sauce
- 1 ½ cup vegetable stock
- salt, to taste
Directions
- 1. In a saucepan over medium heat, saute onion until translusent (about 5 minutes. Add garlic and ginger. Stir.
- 2. Mix in chili powder, nuts, seeds, tomatoes, and cook on low for about 5 minutes
- 3. Add chilis, chocolate, and vegetable stock. Simmer on low for about 30 minutes.
- 4. Remove from heat, and blend until smooth. Salt, to taste.
